The Wusthof Classic 8-inch carving knife sports a series of small hollows that run the length of the blade on both sides. These indentations prevent small vacuums that could prevent a long, smooth carving motion. It's especially good at making paper-thin slices, perfect for sandwiches. Though narrow enough for such fine-tuned deli work, it's also sturdy in the Wusthof tradition, strong enough to tackle any roast, be it beef or bird. Wusthof has two meat forks--one curved and one straight-tined--either of which is a natural pairing with the 8-inch carving knife.
Wusthof-Trident employs almost 200 years of experience in designing their knives. On each of Wusthof's Classic knives, the blade, bolster, and tang are forged (as opposed to stamped) from a single piece of steel. Wusthof uses a high-carbon stainless steel that retains the edge and resists wear; each knife has the alloy's formula printed on the blade. The blade is polished to a super-sharp edge and then hand-buffed. Its long, narrow blade--for smooth, uninterrupted motion on the carving board--is laser tested to ensure a uniform surface.
As with all Wusthof Classic knives, the black synthetic handle is built for strength and durability; it's triple-riveted to the steel tang, which shows through on the edges. Though technically dishwasher-safe, Wusthof recommends that their knives be hand washed to preserve their fine cutting edges. The Wusthof Classic 8-inch carving knife has an 8-inch blade and is 13 inches long including the handle; it comes with a small round tip protector. Wusthof offers a limited lifetime guarantee that its knives will be free of defects in materials or craftsmanship.

I have finally completed my set of Wustof Classic knives. To me, they were well worth the cost. Ive never had knives where they cut thru vegies like butter! Just watch the fingers...theyre very sharp!
