5High quality at a reasonable price

This set is wonderful in that it includes everything you really need in a cutlery set. Most of the commercial stamped sets include upwards of twenty knives, but you'll end up using five or six on a regular basis. The quality of these forged blades is stunning and the edges are razor sharp. With proper honing, using the steel included in the set, these blades will keep their edge for over a year of daily use. I would recommend finding a local bladesmith and having the edge sharpened professionally. It isn't expensive and will maximize performance.The handle itself is comfortable and the balance feels natural. Although the manufacturer says that these are dishwasher safe, I would suggest immediate hand washing after use and complete drying before returning it to the block.

2Beautiful and sharp, but not practical...

Allow me to elaborate on the title of my review; couldn't wait for this set to arrive (came pretty quick). I had to go all out with dinner that night and had nothing but praise for my new set of super-cool knives, with their resplendent blades and exotic wood handles. Flash forward a couple weeks... while quartering a chicken for dinner that night, I was horrified to discover a chip in the blade edge; not a little chip, but a ¼ inch by ¼ inch chip. You might ask yourself, "was he hacking away at this poor chicken?" I have no such disdain for chickens, these were basic joint cuts; ones I've made for years with my Wüsthofs and without incident. The packaging for the knives had warranty language inscribed all over the place stating you should contact the manufacturer directly with any issues. As such, I was on the phone with the warranty department promptly the next morning. The conversation was as follows:Me: "Hi, I was quartering a chicken last night and a large piece of the blade chipped off."Operator: "Yeah, you're not supposed to quarter chickens with our knives."Me: "What? Why?"Operator: "Because they're precision slicing knives."Me: "But I was precisely slicing my chicken!"Operator: "Doesn't matter; we have a disclaimer on our website"Me: "So what am I supposed to do with this thing?"Operator: "You can send it to us at your cost and we can test it for defects."Me: "And if there are no defects to be found?"Operator: "Then we could send it back to you in a few weeks."Me: "I presume at my cost as well..."Operator: "Of course."Me: "Super, thanks!"End of conversation.I found a guy at the Ferry Building Farmers Market here in San Francisco who can hone the blade down to a more uniform edge at a cost of losing a ¼ inch off the entire length of the blade and ruining the Damascus finish that ultimately kindled my desire for these knives.This was a very hard lesson learned, and one I will never make again. The fact is, these knives are beautiful, but impractical. I would liken them to a Ferrari; beautiful, fast and they get a lot of attention, but use them for day to day tasks, and you're inviting devastation; like when you discover that chip...

5Long Razor Blades!

I bought these knives not knowing too much about cutlery. They were recommended by a chief I met and I decided to try out the recommendation. Suffice it to say I LOVE these. I use them everyday and I have nothing but the utmost respect for knives that are as sharp as they can possibly be. I had them sharpened by a professional knife shop and they did a good job but the second time I needed sharpening I decided to use the free sharpening service provided by Shun(Kershaw). The difference was astounding! The Shun sharpening brought them back to their original sharpness .... I like to refer to these knives as long Razor Blades! I'd buy these again in a heart beat.

5Shun Knives are Beautiful, Elegant, and the Sharpest around

The only thing this set is missing is a Serrated Blade. I have the Shun Serrated 9" Bread Knife and although it's not used as often as my Chef's Knife and Paring Knife, it's still essential to have a good serrated blade for cutting bread and the like.Shun knives are beautiful creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slippery when wet - providing a very secure hold. The steel is of utmost quality and sharpness. Do not put this blade into any old electric knife sharpener! Electric knife sharpeners are made to put one angle on any blade. These blades come with a 16 degree angle and you don't want to be changing that angle. There are electric knife sharpeners that can sharpen these knives, but you'll have to do some research and find out which ones can be a fit with these knives. I prefer to hone with a sharpening steel and manually sharpen with a stone if necessary (and I don't see it being necessary to touch it to a stone any time soon). The blade is sharp straight off the factory and as Alton Brown says - it's the sharpest straight out of the factory edge as he's ever seen.These knives are more expensive than most, but I think it's definitely worth it. To have the sharpest, most beautiful knife around - it's no contest. If you are on a budget, build your collection slowly. It's been said that there are only 3 knives that are the absolute basics for any kitchen: A 8" Chef's Knife (or some kind of similar, large-ish chef's knife), a Paring Knife, and a Long Serrated blade for cutting bread and larger items. I would add a thin utility knife and a boning knife to that list next. Then I would add those "in-between" sizes as I get more money flow in. Now if you're buying a whole set like this, you'll get it all in one shot and it becomes a better deal than pieceing your collection together, one-by-one.If you plan on spending any time in the kitchen, good kitchen knives are a definite must. Preparation is the bulk of cooking and when you have good knives, it cuts down on the danger of cutting yourself, it adds pleasure to the work, and it cuts down on prep time. Knives are also a very personal choice and it's best to at least go to a store and try it out for yourself first. Shun Knives are designed by the Japanese, so remember - it's designed for small hands. This makes it fit most women's hands perfectly, but I've heard of guys with larger hands not like it so much and going back to the German knives. So definitely try it out. It's a personal thing, it needs to fit you.Why spend so much money on a knife? Well, if you spend a lot of time in the kitchen, and you almost always have to bust out a knife to prep a meal from scratch - why not use the best? Why spend that time with items that you love and brings you pleasure to use? Many times, it's the small things that brings us the most pleasure in life, and I consider my Shun knives as one of those things. Having something so beautiful and yet so sharp and perfect - it makes my time cooking just that much more enjoyable.Another good thing to know is that although the Shun Knives are usually offered for right-handers, you can get these knives for left-handers. You just need to find the guys who stock and sell those ones as they are less known, and less common.

5Nice Knives for Smaller Hands

I bought this set for my significant other at Christmas. I looked around at Wusthof, Global, and a few others but liked the unique look and feel of these better. I also figured these would be more comfortable and easier to wield for a female. The end result is that she really enjoys them. Although she has fairly large hands for a woman, the handles fit her nicely.The knives come very sharp and hold their edge for a long time. It will be interesting to see how well they take to a professional sharpening. Overall, I am happy that I purchased this set.There is one caveat. I also do quite a bit of cooking and have large hands. After using the Shuns for a couple of months, I have come to the conclusion that the Wusthof Grand Prixs fit me better and feel sturdier. I cannot really justify having two sets of expensive knives around the house, so we will be keeping the Shuns. My advice: Go to Sur La Table or Williams-Sonoma and handle the knives yourself. Feel the weight, notice the handle shape, and decide what fits you best. There are so many quality manufacturers of cutlery now that it is hard to go wrong with any of the selections.

4excellent knives, no taskmaster shears, no logo on the block

The knives are excellent, as is usual for Shun knives. However, the bamboo block does NOT have the Shun logo (it is a plain bamboo block), and the shears are NOT the Shun Taskmaster Shears -no nutcracker, no bottle opener, no bone cutting indentations. In fact, I got the Shun Herb Shears DM7100 instead. My advice: get the knives, shears, and block separately so you get exactly what you want. The few dollars you "save" by ordering the combo are definitely not worth it.

5Best bread knife I've used

After using the Shun to cut some very crusty artisanal breads, I'd have to say it's the best bread knife I've used. The scalloped-style serrations have plenty of bite for batard and peasant boules but cut cleanly and with minimal crumbs; this pattern, also used by MAC, seems to damage the food much less than typical jagged serrations.The balance and feel is very good. The only downside is the steel handle. It fits and feels good in the hand but lacks the "warmth" of the Pakkawood handles of the Classic and Elite series. It might also get slick & hard to grip when wet. This isn't really a flaw- I knew it was stainless when I ordered it. All in all it's a minor quibble with an otherwise fantastic knife. I haven't had it long enough to comment about edge retention but my experience with the other half dozen Shuns and the other VG-10 knives I own (Hattori, Kanetsune, etc) I expect the edge to last for quite awhile.The only way it could really be improved for the price would be if it were a tad longer. 9" is really fine for most stuff but I could see how it could be a tiny bit short for really large loaves of specialty breads.Highly recommended.

4Sharper, Lighter, and Free Sharpening Service.

This Shun Steel Bread knife is excellent. It is composed of a VG-10 cutting core clad with 32 layers of SUS410 stainless steel. VG-10 is a hard steel and Shun harden the steel up to Rockwell hardness C (HRC) rating of 61. This allows the blade edge to hold up against rolling. It also allows the knife edge to be sharpened to a low 15 degree, meaning the knife is much sharper. In comparison, typical Henckels and Wusthof knives have a HRC of ~56 and are sharpened to edge angle of 20 degree (included angle 40 degree). This bread knife is asymmetrically sharpened, so it is almost like a chisel ground, but not quiet. In addition, the knife has a beautiful Damascus look and it has a D-shaped right hand handle. The knife is sharp and light, so it is a very nimble knife in use. The blade curves up gently from tip to heel. This allows you to cut through the bread without having your knuckles hitting the cutting board. So far, my bread cutting experience has been great.The Shun Steel knives have exactly the same shape and blade as the Shun Classic series. The difference lies in the handles. Whereas the "Steel" knives have steel handles, the "Classic" knives have Pakkawood handles. I prefer the Classic wood handle as it looks very attractive and the wood handle is not cold to touch. However, the Shun Classic bread knife was sold at $130 and the Shun Steel bread was sold at $70. Paying $60 extra (and almost double) for a slightly better knife handle is not something I can justify. There are advantages of a steel handle of course. It last longer and more sanitary.So, what are the reasons I purchase this Shun knife over the Henckels and Wusthof bread knives? I enjoy sharpening my other knives using my DMT diamond stone and Japanese water stones. However, it is very difficult to sharp a serrated bread knife. Therefore I decided it is advantageous to have the harder and sharper Shun knife, so that the knife needs sharpening less frequent. In addition, Shun provides free knife sharpening service for life. I will need to pay for the shipping to Shun, but Shun will sharpen my knife for free and ship it back to me for free. This is a superb service, considers that professional sharpening is not cheap and most professional knife sharpeners charge extra for serrated knife and for Japanese 15 degree edge knives. Others simply do not know how to sharp a 15 degree edge knife and will ruin the knife for good. Finally, this Shun Steel bread knife actually costs equal or less than a Henckels Four Star bread knife and a Wusthof Classic bread knife.For disclosure, I have a Dexter-Russell Chinese chef's knife, a CCK carbon steel Chinese chef's knife, a meat cleaver from Kong Moon, a Tojiro white carbon steel usuaba, a Wusthof Blackwood Ikon paring knife, a Henckels Twin L paring knife, a Dexter-Russell paring knife, a Dexter-Russell boning knife and some cheap knives. Currently, this is my only Shun knife, so I am not a Shun disciple who believes Shun is the best. However, this knife is of high quality and free knife service for a serrated knife is, indeed, a great service.In summary, this Shun bread knife is sharper, lighter, nimbler, cheaper and has greater service than its counterparts from Henckels and Wusthof. It is hard to not give a 5-star rating.*Edit* KIA has terminated the free sharpening service for Shun knives. Consequently, I am downgrading the purchase to a 4-star. It is still a good knife, but it has lost an attractive service.

5Excellent Quality for a Budget Price

This knife is a little large, but not heavy in the hand. Because of the extreme sharpness of the blade you should have some confidence in your knife skills, shorter blades are easier to control, and if using large blades make you nervous, you will not enjoy the benefits of owning fine cutlery. This is a Shun steel handle as opposed to the Pakkawood handle of the Classic line. Both have the same comfortable D shape. I have not owned the knife long enough to judge if there will be a problem with slippage with the steel handle. Of coarse the knife cuts crusty breads with ease, control, and slices tomatoes like a mandolin. And it looks great on your magnetic knife bar because of the Damascus Steel. This is my second Shun knife purchase. I was impressed enough with the quality of the first knife, that I knew I would be purchasing more. When it was time to upgrade my bread knife I was going to go with the Global. I also own a Global Santoku so I was familiar with the quality, and I liked the shape of the Global bread knife blade. I had been shopping bread knifes for several months so I would know what to buy when ready. Recently I noticed the Shun Steel Bread Knife dropping in price. When it hit $51.98 I decided to buy the Shun instead of the $84 Global. I received it this past week and highly recommend this knife to anyone who wants quality cutlery without breaking the bank. I have also noticed that much of the Shun Steel line is at reduced prices. Maybe they are being fazed out. If you were interested in these knifes, get them while you can!

5Excellent Slicing Knife

If you are shopping for a Shun, I assume you are already familiar with their reputation for razor-sharp edges, so I will address this knife itself.This slicing knife is a great addition to your set. I recently used it to carve up some beef roasts and I was able to carve paper-thin slices. I didn't experience too much sticking either, this may be due to the Damascus-style pattern that creates micro air-pockets. Therefore, I think this version without the scallops will do just fine.The knife has a good length that's great for most roasts, a tip that makes it easy to maneuver and a sturdy construction that feels balanced and comfortable. The handle is sturdy and has a slight matte finish that keeps it from being too slippery.On another note, I have seen this knife advertised on Amazon for about $60 (which is the price I bought it for). It was first listed at $110, then went down to $60, and now as of writing this review it is back up to $110. I am not sure if it's a supplier issue, but you should constantly monitor the prices of the Shuns sold on Amazon due to these fluctuations. In any event, I still think this knife is worth $110 and I believe you will like this knife as much as I have.

This is a GREAT paring knife. Like all Shuns, it's razor sharp. It's also comfortable in your hand and just the right size for intricate cutting jobs. The handle is hollow, but still has the right amount of weight/balance. I've really enjoyed using it in my kitchen.

5A knife that pleases all

This is an excellent knife and complements a number of other knives I have extremely well.It cuts with a degree of precision that I have just not found with other bread knives (and I have used most of the well-known brands) which can sometimes be too flimsy and move around when cutting bread with a hard crust such as a good sour-dough loaf or they are too thick or become blunt too easily. Also being offset has distinct advantages particularly in not hitting your knuckles when slicing.This knife is one of the workhorses in my cooking exploits and having a reliable knife that cuts consistently across many bread/cakes types is really helpful whether it is a hard crust loaf as mentioned above or it is a cake I am slicing horizontally to fill with fresh cream and fruit this knife is always a delight to use.Even my wife who is not particularly interested in knifes and cooking loves to use this knife and have said on more than one occasion that this is the best knife we own.Simply it is a delight to use and has that added advantage of being beautiful to look at as well as being part of the truly excellent Shun knife range.If I had to limit myself to three knives then this would certainly be one of the three (fortunately I don't).Highly recommended!

4I love it but that comes with its faults

This is a wonderful knife and it is one of my three primary prep and line knifes, however it has its draw backs.Pros: -Great steel -Great look -Holds an edge wellCons: -Almost too heavy, a little cumbersome -Feels akward -Not well balanced -Hard to sharpenI would recommend this knife but i would do so with caution because it take s some time to get use to the way it handles. Although most offset knifes take some time to get use too. I dont know what i would do with out it but it is out of love that i can point out its faults.

5Elegance and Efficiency

This knife is an excellent tool. It looks stunning, and does exactly what it's supposed to. I've tried bread knives that aren't offset, and dislike them because your hand always hits the board before you've cut all the way through. With an offset knife this isn't a problem plus you can cut faster because you don't have to worry about your hand getting in the way. Shun makes excellent knives and this is no exception.

5Hard to believe they're only 5 watts

i own these as well as Gemini's 20 watt speakers, which are very similar to Ion but are 20 watts instead of 5. I have to say, Ion's 5 watt speakers sound way better and def overpower my Gemini speakers. Strange how 5 watts can sound louder then 20, but okay whatever... Ion has more bass to it then the Gemini ones do too...I don't usually trust brands i never really heard of like Ion, but i needed a cheap pair of starter monitor/speakers (that were powered)... and these did the job well. Great for starting out or recording.If i had to do it all over again, i'd get them again.
