5My favorite pan

I love this pan. It's incredibly versatile. I use it instead of a straight-sided saute pan (many cooks don't like to do this but it's my preference). The 12 inch copper pan weighs a ton and is not ballanced for tossing food ... so don't think of this as a larger version of your 10" fry pan. It's best sitting on the stove solidly, with you turning the food in it with tongs or a spatula.There's plenty of room to make a pan sauce, and I like having sloped sides for this--easier to get into the corners with a whisk or spoon. It's also my all time favorite pancake making pan. It heats evenly from center to edge, which is a pretty good trick for a pan this large.Being copper, it's every bit as responsive as you'd expect. The feeling of control is addictive. You'd have to be an arsonist to burn anything in this pan. But in spite of its quick heating and cooling nature, it does a nice job of browning meat--even big pieces. Not as aggressively as heavy cast iron, but I have no complaints. It's also a perfectly capable roasting pan. I've roasted everything from chickens to vegetables to pork tenderloins it, usually at 500 degrees. Cleanup can be a drag after this, but such is life when you roast with lots of fire. Only drawback is that handle is long, so it will take up much more than its fair share of the oven.And then there's price. Copper is up ... these have gone from expensive to outrageous. I think you'd have to consider it a luxury unless you're loaded. The good news is that there's no reason to have a huge set of copper. For me I just have the ones that I saute or make sauces in--this, and a couple of sauce pans. My 10" fry pan is aluminum, and much better for tossing food than even the 10" copper pans. And it costs a quarter as much.Anyway, if you're a fanatical cook, appreciate a versatile pan that does it all well, and are feeling burdened by too much currency in your pockets, I can't recommend this highly enough.

The copper conducts heat beautifully and the stainless interior really lasts. Things stick to the bottom which is then deglazed with wine or broth. Expensive but worth it.

5Excellent cookware

This Mauviel pan is helping to complete my Mauviel collection of cookware, which I just love. The pan heats up quickly and evenly and has not had any issues with sticking. It's also pretty heavy! Love this Pan! I cooked three eggs over easy quicker than a non-stick pan and faster than a non-stick pan. The whites of the eggs cooked beautifully without any color and yolks were perfectly overeasy and creamy (using farm fresh eggs). Cleans easily, just like a nonstick. There is no comparison to copper pans. Go for the 2.5mm it's of better quality and will last a lifetime. Succomb to the expense and buy the better tool. You won't be sorry. Mauviel is perfection!

5Game Changer for Custard, Lemon Curd, Warm Milk...

Oh, I know, it costs a fortune, it doesn't go in the dishwasher, but it heats up like a champ, and looks divine hanging on the wall.I made my first batch of lemon curd (which I used to make in my mother's stainless/aluminum Lagostina hand me down), and there's no comparison. The copper Windsor pan heated up quickly, but I always felt I was in total control of the temperature, and never worried that it would overheat: as soon as I adjusted the flame, the temperature adjusted.As to the day to day, now I just plain refuse to warm milk in the microwave, it's just as quick to heat up in the pan (I mean it's *crazy fast*, warms up nicely, and you can pull it off before it scorches. In the microwave, you set it to 1 minutes or 2 minutes and you get what you get. Taste-wise, I've discovered slowly warmed milk from a pan is not comparable to microwave heating (full disclosure, I use milk from a local dairy farm. It's pasteurized but not homogenized, so your mileage may vary on the warmed milk. The pan, however, will deliver).PROS:- what they say about the control of copper is true: lemon curd, warm milk, are a treat to make. Heats up fast, extremely responsive to changes in the flame. As long as you're keeping an eye on it, you'll never overheat anything.- Go ahead, splurge for the 2.5mm (250c line). It costs more, but if you're just going with 1.5 mm (150s and 150c series), realize that you're just doing it for the divine look of hanging the pot on the rack. The thinner copper won't give you the speed or the control of the 2.5mm. If your going for copper, own it and go for 250c series.- It really does look divine. I never hung a pot on my wall until I got copper. Now I can't bear to put it in the cabinet.- The ergonomics of the cast iron handle is quite nice - better than most clad cookware, and head and shoulders over the all-clad handle.- Stainless interior means it's fairly hassle free.- Copper doesn't discolor as quickly as I thought. I assumed that as soon as I used the pot, I'd have to polish the copper. Not so. I've used it several times and it has its brand new shine. That being said, once the copper starts to show some patina, and if you want to maintain the copper shine, you can either buy their copperbrill product, or you can just sprinkle some salt on a lemon and run it over the copper. Rinse. Dry. You're done.CONS:- I would love a curved lip on the edge to pour more easily. That being said, it pours pretty well.- It's heavy for its size. A lot of that I think comes from the cast iron handle. On the plus side, it feels extremely sturdy. And it's a small pot, so it may be heavy for its size, but it's definitely manageable. Not sure I'd feel that way about a 5qt sauteuse.- Hand wash. This is not a pan for those who like to use the dishwasher. Hand wash and occasional "polish" (in my case this consists of putting a heap of salt on a quarter-slice of lemon, and running it on the outside. Shines!- Comes without a lid. I splurged and bought a lid separately. Yes, it's a windsor pan, and it's for reducing sauces, but sometimes your sauce has reduced plenty, and you want things to stay warm until you serve. Lids. They're not a luxury anymore.Overall, I love it. No regrets. Though, to be fair, I shopped around for the best price. There's a lot of variability of pricing for Mauviel out there online.Frankly, my preferred option would be to fly to Paris where these items can be bought for half the price. If it weren't for the darned flight and hotel :) Maybe for my next Mauviel purchase.
